Far from the splendour of the grand mansions and Romanesque abbeys for which the ancient city is famous, this building offers a more human face, that of a city that, behind its triumphant monuments, did not forget its most disadvantaged. The expression "Œuvre du Bouillon" refers to a charitable institution typical of the Ancien Régime, organised to distribute broth, soup and food aid to the needy in the parish. Arles, a major commercial and river crossroads between the Mediterranean and the Provençal hinterland, was home to a large and diverse population, and social inequalities were as profound there as in any large city in the kingdom. This building was the focal point of this organised solidarity.
